The following information is obtained from the Clinton County Health Department and is compiled from inspection reports.

Violations are either critical or non-critical. Critical violations are more likely to contribute to food contamination, illness or an environmental health hazard, including inadequate cooking of food items or poor personal hygiene.

Airborne Express, 145 Hunter Drive, Wilmington, Aug. 31.

Critical: Grilled chicken 117°F, grilled chicken #2 118°F, hamburgers 120°F, hamburgers 134°F (Vulcan warmer). Hot TCS (time-temperature controlled) foods must be maintained 135°F or above. Person In Charge placed in oven to reheat to 165°F. Corrected. Chicken salad 42°F, pancake batter 45°F (Beverage-Air reach-in cooler). Cold TCS foods must be maintained 41°F or less. PIC discarded food items, PIC to monitor equipment and food temperatures. Corrected. Air temperature 52°F, thermometer 52°F (vending/micromarket cooler). Door was not closed fully, PIC closed door and to monitor.

Non-critical: Top inside surface has food debris accumulation. Shelf in Coke retail cooler has debris accumulation. Dust/grease accumulated on vent hood panels. cooking equipment and oven. Soda spillage on floor under soda bag in box rack. Floor tiles damaged in kitchen (such as near mop sink and 3-sink). Fire extinguisher tags not up-to-date (one near oven was dated 2019).

Closed. Hangar building had accidental release of fire suppression foam throughout building. Person In Charge replacing equipment. Re-opening inspection to be scheduled when ready to open.

Plumbing approval submitted. Previous concerns corrected. Hand sink splash guard needs sealed at juncture of hand sink and guard.

Critical: Marinara 121°F. Hot TCS (time-temperature controlled) foods must be maintained 135°F or above. Person In Charge removed and reheating to 165°F. Corrected. Tartar sauce 43°F, green beans 43°F, chicken soup ›45°F (Atosa 2-door reach-in). Cold TCS foods must be maintained 41°F or less. PIC discarded most product. Adjusted cooler temperature. PIC stated will monitor and rearrange storage to increase cold air circulation. Corrected.

Gnats observed in mop sink area and side bar. Work with pest control operator to eliminate pests.

Non-critical: Salt, bread crumbs, macadamia nuts, etc. missing common name label. Corrected. Ice accumulated in single-door freezer (near entry) in basement area with walk-in cooler.

Spillway Lodge, 623 Old State Road, Clarksville, August 31.

Critical: In 3-door cooler in barn, there were beef ribeyes stored on top of a box of iceberg lettuce. Product must be stored in a way to prevent any possible cross-contamination. All the containers in reach-in cooler in kitchen (M3 cooler) and salad cooler in bar area need to be properly dated for use within 7 days.

Non-critical: Pan under dishwasher with water from unit. Pan under refrigerator with water from unit. Cracked floor tile in kitchen area.
