Clinton County eateries inspected

WILMINGTON — The following information is obtained from the Clinton County Health Department and is compiled from inspection reports.

Violations are either critical or non-critical. Critical violations are more likely to contribute to food contamination, illness or an environmental health hazard, including inadequate cooking of food items or poor personal hygiene.

The following restaurants or food service establishments were inspected recently and violations/comments include:

• Subway (inside Wal-Mart), 2825 SR 73 South, Wilmington, Nov. 14. One previous violation fixed. Thank you. Critical: Knives to cut sandwiches are soaked then sanitized. This is not proper cleaning of utensils. Egg patties stored in reach-in cooler were at 45°F (must be kept cold at 41°F or below to help reduce bacterial growth). the ice spout on the soda machine has a pink residue inside.

No one at this facility is manager certified. Employee wearing headband. This is not a hair restraint. Reach-in cooler behind service line is 50°F and has ice build-up on back wall. Ice on floor of walk-in freezer. Seal hanging off bottom of walk-in freezer door. Carpet on floor of dry storage area; all non-food contact surfaces must be smooth and easily cleanable. Fly strip hanging on faux wall over prep counter. Flooring remnants on doors of cabinets under beverage machines. All non-food contact surfaces must be kept clean and free from dirt/insects. Trash is overflowing and boxes stacked in corner. Wall behind 3-compartment sink is dirty. Floor under racks in walk-in cooler is dirty. Splash/dust on wall behind microwave. Splash on wall in middle room by break table.

**Because of ongoing violations report will be prepared and given to Environmental Health Director for correction.**

Employee wearing Subway scarf like a headband. All employees must wear proper hair restraint. Ice on floor of walk-in freezer. Seal hanging off bottom of walk-in freezer door. Carpet on floor of dry storage area. Flooring remnants inside cabinet underneath soda machine. Boxes stacked in dining area. Wall behind 3-compartment sink is dirty. Floor under racks in walk-in cooler extremely dirty. Wall behind microwave has splash/debris/dirty. Splash/debris on wall in middle room. Note: This report along with report prepared after last inspection will be turned over to Environmental Health Director for corrective action.

• Happy Wok, 1655 Rombach Ave., Wilmington, Nov. 25. Critical: Person in Charge/food employees on-site not able to answer food safety questions and not able to communicate. Family member was called to help translate and Google Translate on phone attempting to help communicate. Facility must be able to demonstrate knowledge and communicate with Health District. Containers of food in walk-in cooler and freezer were not covered to protect from contamination (chopped vegetables, cut meat, sprouts, etc.). Container of sliced chicken (raw) stored above sauces in walk-in cooler. Ready-to-eat foods missing date marks in walk-in cooler (cooked chicken, cut vegetables, etc.). Spray bottle with red chemical did not have common name label. Employee handled money and did not wash hands before assembling wontons.

Beverage cups with no lid found on prep table and next to kettle/warmer. Handwashing sign missing in restroom. Bottle of medicine stored next to prep table. Employee removed it. Containers of peanuts, sesame seeds, seasonings were missing common name label. Bag of onions stored on floor. Employee at front counter who helps bag food and making wontons not wearing a hair restraint. Wet cloths (4) on counter near wonton preparation. Residential box freezer used. Prep cooler across from wok has food accumulations on shelving and in unit. Shelving in prep cooler has rust accumulations. Walk-in cooler shelves, floors, walls and fan covers need cleaning attention! (have food accumulations.) Shelves in walk-in cooler have rust accumulations. Ceiling in portion of kitchen was replaced with acoustic ceiling tiles. Person in Charge certification unavailable. Cooling method observed: Trays on cart in back room. Food must have temperature control to help cool foods quickly. Mop water and wet mops stored in restroom (wet mops must be hung up to dry; dirty water must not be stored in mop bucket. Cardboard on shelf. Note: Provided translated report using Google Translate to have better communication and improved understanding of food safety.
