Violations are either critical or non-critical. Critical violations are more likely to contribute to food contamination, illness or an environmental health hazard, including inadequate cooking of food items or poor personal hygiene.

Work tables and shelves storing food are flush with floor rather than at least six inches off of the ground. Stored chicken wings above safe temperatures. Hot chicken below safe temperatures. Thermometer missing. Light not working in vent hood or in chicken warmer. Chicken juice and accumulation in reach-in cooler. Chicken pieces and accumulation under prep table cooler’s lid. Prep sink missing air gap. Grease and chicken debris under fryers. Drywall missing paint above urinal in men’s restroom.

United Dairy Farmers, 395 E. Main St., Wilmington, October 7, standard. Ice cream scoops in dipper wells didn’t have running water (water runs on a timer). Soft-serve frozen yogurt machine cleaned every 48 hours rather than every 24 hours.
