Clinton County eateries inspected

WILMINGTON — The following information is obtained from the Clinton County Health Department and is compiled from inspection reports.

Violations are either critical or non-critical. Critical violations are more likely to contribute to food contamination, illness or an environmental health hazard, including inadequate cooking of food items or poor personal hygiene.

The following restaurants or food service establishments were inspected recently:

• Mac D’s Pub, 1400 W. Locust St., Wilmington, Oct. 12. Critical — The cole slaw in the walk-in cooler was at 43°F, the mayo on the sandwich prep cooler was at 49°F and the cole slaw was at 44°F. All TCS foods must be kept cold at 41°F or below to prevent bacterial growth. The following products were unlabeled and were missing dates: Sliced ham and sliced turkey in the walk-in cooler; hamburgers, chicken, and ranch dressing in the walk-in cooler.TCS RTE foods, prepared or opened held for more than 24 hours must be marked with dates (7 days) so that they know when they must be used by or discarded.

The front bar did not have a thermometer in the beer cooler where whipped cream was stored and the refrigerator in the front bar did not have a thermometer where half & half was stored. All refrigeration units must have thermometers to ensure proper temperatures are being met. There were no test strips available for the dishwashing machine. All mechanical dishwashing machines must have test strips available to check temperature and sanitizer levels. The can opener blade was dirty. The vent hoods were dirty. The nozzle on the container had brown residue. All equipment in the facility must be maintained clean and in good working order. Gap observed over top of stove by back door. Exterior of buildings must be sealed to prevent entry of pests. There were floor tiles missing in front of deep fryer. Wood top by 3-compartment sink was worn/paint missing. Light out in dry storage area and there were ceiling tiles with what appeared to be water damage. Facility shall be maintained in good repair.

• American Showa, 3343 SR 28, Blanchester, Oct. 6. Sliced turkey 51°F (cold service line). Cold TCS foods must be maintained 41°F or less. PIC discarded. Corrected. Lights not working in hot holding cabinet. Equipment lighting shall be maintained in good repair. Dry stockroom walls are not easy to clean (exposed drywall, open wood and metal studs). Project was not finished from micromarket installation. Plans submitted indicated painted drywall as facility wall finishings. Additionally, chunks of drywall and insulation are sill on the floor between open studs. Facility shall be maintained in good repair and easy to clean.

• Frisch’s Restaurant, 1341 Rombach Ave., Wilmington, Oct. 13. Follow-up. All previous violations (salad bar temperatures and floor in front of deep fryers) have been corrected. Thank you!

• Kroger, 1230 Rombach Ave., Wilmington, Oct. 13. Follow-up. All violations in the “Clicklist” section have been corrected. Thank you.

• Wilmington Nursing & Rehabilitation, 75 Hale St., Wilmington, Oct. 13. No procedure posted for cleaning up vomiting/diarrhea. All FSO’s must have procedure posted for cleaning up vomiting/diarrhea. Left handouts. Slicer in the kitchen area had food debris on it left from last night. All equipment must be maintained clean and sanitized after use. (Manager stated he was going to break it down.) The wall behind ice machine in kitchen dirty/broken. Possible water damage to ceiling above dry storage (area is bubbled). Trash/food on floor of walk-in cooler and freezer. Door to serving area in kitchen cove molding pulling away and wall damaged. In the kitchenette the floor tile around the ice machine is cracked. In the kitchenette the cove molding is missing along the wall. There was exposed insulation around the water line to the ice maker. Walls in kitchenette where cabinets removed needs to be painted. All parts of the facility shall be maintained in good order. All floors, walls and ceilings must be smooth and easily cleanable.

• Taco Bell, 1701 Rombach Ave., Wilmington, Oct. 13. There was no procedure posted for cleaning up vomiting/diarrhea. There was nosign-off sheet for employees regarding reporting illness. All FSO’s must have procedure for cleaning up vomiting/diarrhea posted in the facility. All FSO’s are required to have sign-off sheet to ensure employees know when to report illness. (Critical) The face plate of the soda machine was dirty. The nozzles on the slushie machine were dirty and had black residue on seal. All food contact surfaces must be maintained clean and in good repair.

There was no handwashing sign posted in the men’s bathroom. All restrooms must have sign posted that employees must wash hands before returning to work. There was food and dirt accumulation on the floor under the deep fryer. All floors, walls and ceilings must be kept free from dirt/food accumulation to improve overall sanitation of the facility.

Discussed heating, cooling and reheating of bulk foods. Any products held over for use are cooled, double-bagged and placed in walk-in cooler overnight. Items are reheated and used first the next day (usually chicken and steak). Beans are prepared from dehydrated product. Discussed how this item was prepared and heated. Showed manager-in-training how to calibrate digital thermometer. Test strips available and employee checked sanitizer solution. Gloves, hats, test strips and thermometers available.
