Clinton County restaurants inspected

WILMINGTON — The following information is obtained from the Clinton County Health Department and is compiled from inspection reports.

Violations are either critical or non-critical. Critical violations are more likely to contribute to food contamination, illness or an environmental health hazard, including inadequate cooking of food items or poor personal hygiene.

The following restaurants or food service establishments were inspected recently and violations/comments include:

• Subway, 2825 SR 73 South, Wilmington (inside Wal-Mart). May 16. Critical: PIC (person in charge)/manager has not been properly trained. Manager did not know how to check sanitizer solution or know where test strips were located. The person in charge does not have applicable knowledge of what is going on in the facility.

Critical: There is no verification available to ensure employees are reporting illnesses and know when to report illness. The PIC is not Class 2 food safety certified. There were outdated packages of oregano seasoning (10/8/16). There was an unidentified package in with the salt and pepper packages that was dated 3/6/14. There was no sanitizer available in the sanitizer solution in 3-compartment sink. The two cutting boards in the back room are scratched/cut and not easily cleanable. The salad bowls used for chopping are cut up and not smooth and easily cleanable. There was an unmarked and undated container of chicken strips in the walk-in cooler. The bottles of sauces in the walk-in and on work table were not dated. The hook-ups for the slushie machine were lying on the floor. The top of the brewing area of the tea/coffee pot was dirty.

When we arrived at the facility, an employee opened a canned drink, drank from the can and then sat down on “prep table.” All employees must eat/drink in designated area out of food prep area. General manager stated that employees could eat beside pop syrup containers or in dry storage area/desk. The area where the pop syrup containers are located is beside where cookies on trays are stored to cool. This area is not a good place for employees to eat or consume beverages. There was a container of tuna salad in the walk-in cooler that had tuna salad on lid and lip of container. There were dirty wiping cloths stored in a container with the chemicals with sign that said do not throw away. These wiping cloths were dirty and were to be reused.

There was a dirty wiping cloth stored on packages of sauces in the dry storage area. There were several containers in the dry storage area (used for spices and salt packages) that were not food grade containers. The shelving units in dry storage area are dirty. the condenser unit is dripping water on shelving/boxes/floor of walk-in cooler.

The tomato slicer hanging up on storage rack still had pieces of tomatoes on the blades. The ice chute on the soda machine had a black residue on the inside. The tops of the tea containers were dirty. The pop machine had splatter on it. Single-service cups and coffee pods are stored underneath the plumbing for the hand sink.

Employee cut pizza with cutter then tossed it into the hand sink. The wall behind the soda machine is dirty. The caulking around the wall by the soda machine is dirty. The cove molding is broken by the doorway in back room (dry storage of sauces). The air curtain is dirty and has dust build-up. The floor is dirty under the pop syrup boxes. The floor is dirty under the prep table (middle room). Floor is dirty by emergency exit.

The floor is dirty and there are droppings in the cupboard by back door. There is trash on the floor of dry storage room. There is excess equipment stored in dry storage room. There is a light out by mop sink. There is excess maintenance equipment stored in mop sink. There is mildew on the caulking behind 3-compartment sink.

The wall is dirty behind 3-compartment sink. There was food residue on shakers on work line. there was dirt/debris on the inside/bottom of toaster oven. the side of the toaster oven had dust build-up. Underneath the toaster oven was dirty.

The slushie machine, the front plates had black residue. Under the slushie machine was dirty. The pretzel prep area was dirty and had oil/dust in black storage containers. There was slushie residue on paper where cups were stored.

• New Vienna 1st Stop, 101 N. South St., New Vienna, May 11. Follow-up. Critical: The tornado on hot dog roller at front was 128°F and the big hot dog on the hot dog roller was 77°F. Items on roller that are for self-service must be heated to 135°F or above or must be labeled “not for sale” until adequate temperature is met. (2nd Notice.) In the reach-in the shredded cheese in the bag, the opened biscuits and open package of hot dogs were not dated. (2nd Notice.)

The seal on the bottom of the walk-in freezer is coming off. There is a puddle of ice cream containers, and packages feel soft. The back room by the office and in the storage area are unfinished pressboard walls. (3rd Notice.)
