Clinton County eateries inspected

The following information is obtained from the Clinton County Health Department and is compiled from inspection reports.

Violations are either critical or non-critical. Critical violations are more likely to contribute to food contamination, illness or an environmental health hazard, including inadequate cooking of food items or poor personal hygiene.

Hot Head Burritos, 844 Rombach Ave., Wilmington, Nov. 4.

Critical: There was a scoop covered in rice stored on top of the rice cooker. In the warmer box, pork was 93°F; chicken in warmer pan 1 was 103°F; warmer pan 2 was 123-130°F; all potentially hazardous foods must be kept warm at 135°F or above to help reduce bacterial growth. Pans of meat in warmer must either be reheated to 165°F or above, or they must be discarded. There were chemicals (cleaners) stored on same shelf/right beside cooking spray by the grill.

Non-critical: There is no verification available that anyone at this facility is manager certified in food protection. There are no procedures posted for cleaning up vomit and diarrhea. Container of oil in kitchen not labeled. Container of salt not labeled in kitchen. Employees working in the facility must wear hair restraints. Employees with facial hair must wear beard restraint. Front of the Continental coolers on prep line (both 2-door and 1-door units) were dirty. Inside of Kelvinator cooler beside make line was dirty. Inside of warmer unit was dirty (trays had food debris). There are boxes stored on floor of outdoor storage shed. Wall behind 3-compartment sink is dirty. Wall behind front warmer is dirty. There was a mop head down in mop sink; all mop heads must be stored in a manner to prevent contamination and that allows mop to air dry.

Subway, 31 E. Washington St., Sabina, Nov. 4.

Critical: On the prep table, eggs 42°F, tuna salad 42°F and chicken 42°F. All potentially hazardous foods must be stored cold at 41°F or below to help reduce bacterial growth. The following items were out of date: Pizza sauce in reach-in cooler was not dated; bacon Nov. 3; eggs Oct. 22; pickles Oct. 30; chicken strips Nov. 3; fresh mozzarella in the prep cooler Nov. 3. Walk-in cooler: chicken Oct. 30, tuna Oct. 31. There was an unpacked pan of pickles in walk-in. Pans stored on clean rack have food debris left on them.

Non-critical: There is no verification that anyone here is manager certified in food protection. No employees wearing hair restraints. All sauces and condiments are refrigerated after opening. Prep table not working and storing sauces unrefrigerated at room temperature. Asked them to discard all sauces. They discarded. All sauces must stay refrigerated after opening. Straws, lids, etc. stored under handsink. Prep cooler on line not working at all. Microwave not working at all. Walk-in freezer has ice build-up on floor, boxes and ceiling. Walk-in cooler has water on floor. Cracked floor tile. Floor under 3-compartment sink is dirty. Floor under shelving unit is dirty. Mop head stored in mop sink. All mops must be stored in a manner to air dry and out of mop sink. Two beverages on prep table in back with no lid. All beverages for employees must have lids.

Facility has new sign in by mop sink. Manager said remodel/new floors. Called Carrie Simon from Subway regarding remodel. Said she worked for third-party owner responsible, but yes, doing remodel. Called owner about remodel. He said they are not remodeling, just painting and replacing floor. Told him he needed to submit plans. Asked when remodel taking place; he said in 3 months. Told him he still needed to submit plans and asked what time he was doing this work.

Family Dollar, 105 E. Main St., Clarksville, Nov. 2.

Non-critical: Water was shut off Oct. 27 due to not passing backflow inspection. Spoke with manager on Oct. 29 and district manager on Oct. 29. They were getting port-o-lets and were cleaning with bottled water. On Nov. 2, facility had water available in both restrooms. Backflow testing was completed today. Will stop by Water Dept. to check status.
