Clinton County eateries inspected

WILMINGTON — The following information is obtained from the Clinton County Health Department and is compiled from inspection reports.

Violations are either critical or non-critical. Critical violations are more likely to contribute to food contamination, illness or an environmental health hazard, including inadequate cooking of food items or poor personal hygiene.

The following restaurants or food service establishments were inspected recently:

• Arby’s, 1619 Rombach Ave., Wilmington, Nov. 30. Critical: In the walk-in cooler: Roast beef at 42°F, ham at 45°F, and sliced tomatoes at 43°F. In the sandwich prep cooler on the line: Sliced tomatoes at 47°F and smoked ham at 51°F. All TCS foods must be kept cold at 41°F or below to reduce bacterial growth.

There is an accumulation of ice on the condenser lines of the walk-in freezer. Walk-in cooler door not shutting (catching on floor, handle broken). Outside thermometer of walk-in cooler reading 50°F and inside thermometer reading 44°F. Side counter (by roast beef slicer) in disrepair. Inside of all three microwaves are dirty with food debris. Prep cooler on the line — inside thermometer reading 44°F. All equipment must be maintained in good working order. Black/pink residue on inside of ice chute on pop machines. The soda machines had lots of splatter on them. All food contact surfaces must be maintained clean and free from dust/dirt debris. The “Traulsen” reach-in freezer had a build-up of ice on the roof of the inside. All equipment must be maintained in good working order. There is a mop head stored in the mop sink. there is an accumulation of dirt on the floor around the ice machine. There is cracked floor tile in front of the deep fryer. There is splatter on the wall behind the cart/shelf holding the buns by the trash can. There was dust on ceiling tile and back of hanging sign above the food prep sandwich station. All parts of the facility shall be maintained clean and free from dust/debris. All mop heads shall be hung up to dry and nothing shall be stored in the mop sink.

• The Village Deli and More, 405 E. Washington St., Sabina, Nov. 30. Critical: Employee eating while cleaning equipment in kitchen. Employees must only eat in designated areas separate from food prep to prevent contamination to equipment and prep areas.

Local honey for retail sale is missing required components on label (quantity of contents and address). Local honey must be labeled properly to be considered an approved food source for your RFE. Shelves and product stored on units are less that six inches in dry stock space. Food in storage must be stored six inches above floor.

Critical: Ends of cheese in prep sandwich cooler missing date labels. Chopped ham found dated 11/19. RTE TCS foods held for 24 hours or more must be marked with date to indicate day food shall be consumed, sold or discarded; maximum hold time seven days. Remember — oldest ingredient must be considered when making new product (ex. ends of cheese for macaroni and cheese).

Microwave in RFE is not commercial or NSF (or similar) rated. Sticker residues observed on clear storage pans in stock room. Residues shall be removed and cleaned/sanitized before used again. Equipment shall be maintained clean.

• The Escape, 36 W. Sugartree St., Wilmington, Nov. 23. Qual test strips were damaged. Sanitizer test strips must be available to measure sanitizer solutions. FSO currently selling only pre-packaged snacks and slicing lemons, etc. Limited menu while waiting to open new kitchen.

• Murphy Theatre, 50 W. Main St., Wilmington, Nov. 26. No clean-up procedure for cleaning up vomiting/diarrhea. No sign-off sheet for employees. All FSO’s must have procedure posted for cleaning up vomiting/diarrhea. All FSO’s must have sign-off sheet for employees to report illness. (Left handouts.)

• Airborne Express, 145 Hunter Drive, Wilmington, Nov. 29. Follow-up. All other violations corrected (2.4, 4.5, 4.4). Self-serve cups are labeled, but do not have label or signage above product with ingredients. Discussed with PIC regarding listing ingredients in product. Still working on signage. Also obtained label on individual package of brownies regarding ingredients. Calling ODH and ODH to ensure label is sufficient. All products removed from original package must be labeled and when for sale for individual purchase must have ingredient label. (2nd Notice.) The paint on the ceiling is peeling off over where automatic dishwasher used to be. All floors, walls and ceilings must be in good repair. (2nd Notice.)
